I think it was implied that he was bitten by one of the parishioners. He was last seen hugging the Padre as they all died and then when we first see him when Strand arrives he has a bandage on his arm with bite shaped bleeding seeping through.

 

RIP Celia and Jorge! Celia, you were an interesting lady who I kind of liked, even if you were the leader of a crazy killer owl cult. Hope you enjoyed being eaten alive by your friends!
