Ok upon rewatch yeah it appeared Joan had surgery during daylight (morning?) then awoke that same nite when Beth was cleaning the blood from the floor (post surgery), the two had a conversation, then the next day Joan comitted suicide.

So looks like your theory was correct as far as being able to amputate after x amount of time I'd presume.

Maybe the bite wasn't on a main artery or a huge chunk?
