    My nutritionist has some good recipes on her website as well as an active pinterest page for new ideas.

    When eating a 'big salad', I tell people to add a packet of tuna fish to it. No mayo, just the fish. Add plenty of spices, tomatoes, red onions, mushrooms, and hard boiled egg whites [just the whites, mind you]. For dressing, use lemon juice and apple vinegar. What you now have in front of you is a large meal that is approximately 180 calories. This is the same amount of calories as in about 10 saltine crackers.

    No, it would have to be called a hen sandwich with a side of tiny chicken wings to represent Rick's scrawny arms.

    I DO have a chicken sandwich recipe. Fry up some green bell peppers and white onions [in water, never oil mind you] and apply about 5 ounces of Sam's Club whole chicken, no skin. For the bun, either low cal wheat bread or english muffin. Add fried shrooms and you have a meal for less calories than a glass of Pepsi.

    Hen is actually high in carbs. I got in a staring contest with a one-eyed hen a few years ago, but when poop came out of its eye, I realized my mistake.

    That sounds pretty good! I have used the portobella as the bun before and another time as my "steak". I love mushrooms!

    SkinnyTaste is one of my favorite websites for low calorie cooking. Her recipes are really great - I haven't made anything we didn't like, and my husband will actually request I make things from this website even though he isn't really watching what he eats. Anyway, there are tons of delicious recipes so I'll just mention something a little different - I bought a spiralizer a few months ago and it is so much fun to use! I've made this recipe quite a few times.

    Spiralized Greek Cucumber Salad with Lemon and Feta
    Skinnytaste.com
    Servings: 1 • 1 salad • Old Points: 5 pts • Points+: 6 pts
    Calories: 225 • Fat: 16 g • Carb: 16 g • Fiber: 4 g • Protein: 7 g • Sugar: 1 g
    Sodium: 697.5 mg • Cholesterol: 25 mg

    Ingredients:


    • 1/2 seedless English cucumber (about 7 ounces)
    • 1/4 of a green bell pepper, chopped
    • 1/3 cup grape tomatoes, halved
    • 5 pitted kalamata olives
    • 1 tbsp red onion, sliced
    • 1/2 fresh lemon
    • 1 oz fresh feta, sliced thick
    • 1/2 tablespoon extra virgin olive oil
    • kosher salt and freshly ground black pepper
    • 1/2 teaspoon fresh oregano leaves, minced

    Directions:

    Spiralize the cucumbers using the chipper blade on the Paderno spiralizer. Cut the strands into smaller pieces, about 5-6 inches long so it's easier to eat. If you don't have a spiralizer, you can just dice the cucumbers with a knife into small cubes.

    Indeed. If you know how to grill, you have a delicious meal there. But you are so skinny and underweight now that you shouldn't be cutting these corners. :)

    And [MENTION=75261]VickGrimes[/MENTION] that salad looks amazing! I make something similar using zucchini and fresh basil but no cheese!

    Yeah, I've never put hunk o' cheese on it, I usually just put a little crumbled feta. I love the spiralizer though, I want to experiment with it more! I haven't spiralized zucchini yet, but I know a lot of people do to make "noodles" and I think that would be fun to try. Hubby loves zucchini and I think we have a whole Costco sized package in the fridge right now.
